The Boiling Process
Here’s where the real transformation happens. The collected sap, which is about 98% water and only 2% sugar, must be boiled down to create syrup. This process takes place in a sugar shack, where large evaporator pans sit atop a wood-burning oven. As the water evaporates, the sap becomes more concentrated and eventually turns into the sweet, amber syrup we all love.
